Here's a list of classic climbing places that I one day wish to visit:

California

Bishop

Bishop is in Owen's Valley, on the eastern side of the Sierra Nevada Mountains. There are enough sport and bouldering problems here to fulfill a lifetime of climbing. The main areas here are Buttermilks (has the legendary Ironman Traverse - V4), Happy Boulders (which has over 120 bouldering problems), and Owen's River Gorge (has some of the best sport climbing in the US).

Joshua Tree

Joshua Tree, or what many climbers refer to as J-Tree, is a high desert located 140 miles east of LA. It is easily the best traditional winter climbing destination in the US, and the thousands of climbers all over the world you will find here is proof of that. There's over 7,000 established routes in the park and several lifetimes worth of bouldering problems.

Thailand

The Railay Peninsular of Krabi (southern Thailand) has some of the best and most scenic limestone sport climbs and multi-pitch leads in all of Asia, and the majority of them being right on the beach. Many beach resorts are literally right next to the crags. I heard you can even order a beer from the bar as you are rappelling down from a climb.
